The origin of churros is unclear. One theory is they were brought to Europe by the Portuguese inspired by the Chinese Youtiao bread stick. Another theory is that the churro was made by Spanish shepherds, to substitute for fresh bakery goods. Churro paste was easy to make and fry in an open fire in the mountains, where shepherds spend most of their time. 
Anyhow, it was only a matter of time before churros traveled to South America and other Hispanic countries and communities.
Once churros were adopted by other countries, they continued to evolve. In Brazil, instead of being eaten plain, or rolled in sugar, a hollow, jumbo-sized churro was created, and stuffed with all kinds of delectable fillings such as chocolate and doce de leite (caramel).
